Title: The extracts from mushroom fructifications as a potential compound meat-mushroom souces
Abstract. The aim of this work to determine the phenol compounds amount in the Pleurotus ostreatus fructifications and extracts. It was determined also effect of mushrooms extract addition on the sunflower oil autooxidation in comparison with synthetic antioxidants: BHA I α-tokoferol. It was studied also influence of organic solvent on the efficiency mushroom extracts. It was determined effect of blanching on the antioxidant activity of phenol compounds contained in Pleurotus ostreatus.
